Please find attached the reports for the SAP calculation.

In summary, my understanding is that to compensate for no insulation in the floor, 62.5mm of insulated plasterboard needs adding to the sloping ceiling in the kitchen, and the flat roof insulation increased from 100mm to 200mm.

Having spoken to Neil at Brian Scott Designs with regard to the flat roof insulation, he has said that if rockwool is used, it will require appropriate ventilation to prevent condensation forming.
